Spicy Smokey Pumpkin Hummus
- 1 14-ounce can chickpeas
- 1/4 cup extra virgin olive oil
- 1 cup pumpkin puree
- 2 cloves garlic
- 1/4 cup tahini
- Zest from 1/2 lemon
- Juice from 1 lemon
- 1 single chipotle (from a can)
- 1 teaspoon salt
- 1/4 teaspoon paprika
- Combine everything in a food processor and process until smooth. Add more salt if needed.
- Serve with a drizzle of olive oil and some pumpkin seeds on top, if desired.
